1 pound wild mushrooms, washed and cut into 1/4-inch thick slices.
1 medium onion, cut into 1/4-inch pieces.
1/2 cup dry white wine.
3 to 4 cloves garlic, minced.
2 tablespoons olive oil.
Sea salt and black pepper to taste.
Directions
In a medium sauté pan, heat the olive oil over medium-high heat.
When the oil is fragrant (before it starts to smoke), add the chicken pieces and stir to coat.
Cook for 5 minutes. Add the onion, garlic, salt, and pepper. Stir and cook for another 5-7 minutes, until the onion begins to brown.
Pour in 1/4 cup wine and bring mixture to a boil.
Cook until all liquid is absorbed, about 10 minutes, then add 1/4 cup wine, stir, and cook again.
If mushrooms are still a little tough after all liquid is absorbed, add more liquid and cook longer.
Otherwise, remove from heat and serve on crusty bread, toasted or grilled, brushed with olive oil or butter, and sprinkled with chopped fresh herbs.
